Spicy Tomato Spaghetti With Burrata
A comforting preparation with many different variations, this dish, also known as Spaghetti Alla Carrettiera, is a Sicilian special. Legend says that the name ‘carrettiera’ was coined by Italian cart drivers, or ‘carrettieri’, who would move from town to town many years ago, to sell their wares. For basic sustenance, they would put together simple pasta dishes using pantry staples tucked away in their carts. Think dried mushrooms, canned tomatoes, a bit of garlic and a handful of basil or parsley. Cooking this Italian classic is now made easy, with our take on this recipe, with the added creaminess of a big dollop of burrata. Enjoy!
